Easy Pot Roast

We don't eat a lot of red meat in this house, but sometimes it's nice to change it up and serve a good ol' beef roast. Since I don't particularly enjoy being hands-on with red meat, I let this one cook in a crockpot all day and come home to find it completely cooked through and ready to serve. I also rarely use cream-of-anything soups, but I don't mind it in this recipe.

Pot Roast with Red Potatoes

Ingredients:
1 10oz can cream of mushroom soup
1 pkg dry onion soup mix
1 cup water
2lb pot roast
Red potatoes

Directions:
Cut the potatoes into wedges and put in the bottom of the crockpot. Place the roast on top of the potatoes, and cover with the mushroom soup mix. Pour the water and dry onion soup mix over the top. Cook on low for 8 hours, and enjoy!
