Pasta with Avocado, it's better than you think!

I finally came across another recipe in Veganomicon that I like. I think this might be the 2nd recipe out of...many. I was going to give this 5 stars, but then we tried to heat the leftovers the next day and they were terrible. This recipe does not keep very well, so eat it all when it's fresh!

Cook the pasta according to directions. Add the broccoli in the last minute of cooking.

Add the oil, garlic, zest and red pepper to a hot pan and saute. Add the wine and reduce, then add the lime juice, broth and black pepper. Bring to a boil, then add the arugula and simmer.

Add the broccoli and pasta to the veggie mixture, and mix together. Add the avocado, gently toss, and serve!
