Here's another recipe with quinoa. This recipe is from Veganomicon, and I actually liked it! Perhaps there's hope for this cookbook after all; I will definitely make this one again.
Pineapple-Cashew Quinoa Stir Fry
You can find the complete recipe here. I made it with peas, not edamame, and I used canned pineapple instead of fresh. I also used olive oil, not peanut oil.Directions:
1) Make the quinoa the night before.
2) Start by toasting the cashews, then remove from the pan.
3) Add oil, garlic and scallions, then the chile pepper and ginger. Add the red pepper and peas, then the spices, and finish off by adding the cooked quinoa, pineapple and cashews.4) Combine mirin, veggie stock, and soy sauce and pour over the stir fry mixture.
