Cooking black eyed peas on New Year's Day is supposed to bring you good luck for the entire year. I'd never made this traditional dish, so I thought I'd give it a try! You might know this dish as a Hoppin' John, which according to Wikipedia consists of black-eyed peas, rice, onion and bacon. The recipe I came across didn't have rice in it but it sounded delicious and we even followed the tradition of leaving three peas on our plate to signify luck, fortune and romance in the new year.
This would make a great side dish any time of the year!
Black Eyed Peasadapted from All RecipesIngredients:
4 slices bacon, chopped
1 can black-eyed peas, lightly drained
1 onion, chopped
1 (14.5 ounce) can diced tomatoes, undrained
1 clove garlic, minced
1 tablespoon chili powder
Directions:
Cook the bacon in a large skillet until evenly browned. Add the onion and garlic to the pan and cook until softened. Add the peas, tomatoes and chili powder and heat through. Enjoy!
